Vegetarian pasta salad with broccoli and goat cheese

A fresh vegetarian pasta salad with broccoli, cherry tomatoes, goat cheese and cashew nuts.
Preparation
Cut the broccoli into small florets, quarter the cherry tomatoes, dice the soft goat cheese, and slice the red onion into half rings. Coarsely chop the cashews.
Cook the pasta according to the package directions. Rinse under cold water, add 1 tablespoon of olive oil, and toss to combine.
Meanwhile, bring a large pot of water to a boil. Cook the broccoli for 6 to 7 minutes, or until al dente. Drain.
Toss the pasta with the red onion, cherry tomatoes, and broccoli. Add the Vegetable Finish - Broccoli Mix and 3 tablespoons of olive oil. Toss to combine. Garnish the salad with the soft goat cheese and cashews. Serve immediately.

- 250 g cherrytomaten
- 125 g zachte geitenkaas
- 75 g cashewnoten
- 200 g pasta, bijv. fusilli
- 1 rode ui
- 1 zakje Groentefinish - Mix voor Broccoli
- 3 el olijfolie
- peper en zout, naar smaak
