Vegetarian quesadilla with avocado
A simple snack of vegetarian quesadilla.
Vegetarian quesadilla with avocado. A delicious, quick lunch with tortilla wraps, avocado, corn, and bell pepper. This vegetarian quesadilla is a great snack for the weekend or a party!
Preparation
Dice the bell pepper and avocado. Drain the corn. Finely chop the red onion and garlic.
Mix the diced tomatoes with the World Spice Blend - Chimichurri.
Place four tortilla wraps on a cutting board. Divide the seasoned diced tomatoes, vegetables, and grated cheese among the tortilla wraps. Top with the remaining wraps.
Place the quesadillas between the contact grill or sandwich maker until they are nicely brown.
Cut the quesadillas into quarters and serve stacked on top of each other.

- 1 groene paprika
- 1 avocado
- 150 g mais (0% toegevoegd zout)
- 1 rode ui
- 2 tenen knoflook
- 200 g geraspte Emmentaler kaas of gebruik Mozzarella, (zachte) geitenkaas, hüttenkäse, ricotta, zuivelspread
- 400 g tomatenblokjes (blik, 0% toegevoegd zout)
- 2 tl World Spice Blend - Chimichurri
- verse koriander, naar smaak, ter garnering
