Whole wheat pita with vegetarian gyros

Vegetarian food boring? Quite the opposite! With this recipe, you'll show everyone that vegetarian food is incredibly delicious. The vegetarian gyros are made with marinated oyster mushrooms. Served in warm pita bread with fresh tzatziki and grilled zucchini, this is the perfect dish for a cozy lunch or a quick dinner.
Preparation
Preheat the oven to 200°C (400°F). Slice the zucchini and tear the oyster mushrooms into strips. Coarsely chop the parsley.
Marinate the oyster mushrooms with the Gyros Mix, ½ of the parsley and 2/3 of the olive oil and place in the refrigerator for 10 minutes.
Meanwhile, prepare the pita bread in the oven according to the instructions on the packaging.
Heat the remaining olive oil in a grill pan over medium heat and grill the zucchini for 5 minutes, turning them halfway through. Crumble the feta cheese into coarse pieces.
Heat a pan over high heat without oil or butter and cook the oyster mushrooms for 10 minutes until golden brown. Stir regularly.
Cut open the tops of the pita breads and spread the tzatziki over them. Top with the grilled zucchini, oyster mushroom gyros, and feta.
Garnish the pita breads with the remaining flat-leaf parsley and serve.
