Fan of aubergine with feta from the BBQ
Vegetarian side dish with grilled eggplant. You can also prepare the fan in a pan.
BBQ Eggplant Fan with Feta. A delicious vegetarian dish of stuffed eggplant with (vegan) feta, tomatoes, and red onion. Perfect for a summer evening, served from the BBQ.
Preparation
Form the eggplant into a fan shape by cutting it into 0.5 cm thick slices starting from the top. Be careful not to separate the slices from the top.
Mix the (olive) oil with the World Spice Blend - Vadouvan. Generously coat the eggplant fan with the mixture.
Slice the onion and tomato and crumble the (vegan) feta. Divide these ingredients between the eggplant slices.
Light the barbecue. Place the eggplant fan on a piece of foil and place it on the barbecue. Would you like to cook the fan in a pan or oven (200°C, 30-40 minutes)? That's also possible.

- 1 grote rode ui
- 2 grote tomaten
- 150 g (vegan) feta
- 2 el World Spice Blend - Vadouvan
- zout, naar smaak
