Sweet potato salad with avocado and feta
Vegetarian sweet potato salad with cherry tomatoes and walnuts.
This vegetarian sweet potato salad is packed with vegetables. The soft flavors of avocado and feta, along with the fresh spring onion and cherry tomatoes, are beautifully enhanced. The mayonnaise and lime dressing completes the dish, and not to forget: the addition of World Spice Blend - Vadouvan gives the salad a delicious crunch.
Preparation
Preheat the oven to 200°C (400°F). Cut the sweet potatoes into cubes of about 1.5 cm (0.5 in). Spread the sweet potato cubes on a baking sheet and drizzle with olive oil and World Spice Blend - Vadouvan. Bake the potatoes for about 20 minutes, or until tender.
Cut the cherry tomatoes, avocado and feta into cubes, the spring onion into thin rings and chop the walnuts into small pieces.
Mix all the chopped vegetables, the feta and the walnuts in a bowl and add the fried potato cubes.
Make a dressing with the mayonnaise and lime juice. Drizzle the dressing over the salad and serve immediately.
