Sweet potato mash with chorizo
Ideal as a change from Dutch cuisine and always delicious!
A mashed potato, but with a twist. This mashed potato is made with sweet potato and gets extra flavor from the sweet potato mash spice mix. Chorizo, feta, and tomatoes make it a complete meal. A perfect change from traditional Dutch cuisine and always delicious, winter or summer!
Preparation
Peel the sweet potatoes and cut them into equal-sized wedges. Bring water to a boil in a saucepan and cook the potatoes for 15-20 minutes, or until tender.
Cut the chorizo and feta into cubes of about 1 by 1 cm. Halve the cherry tomatoes and finely chop the arugula.
Heat the oil in a frying pan and fry the chorizo cubes until crispy in about 5 minutes.
Drain the sweet potato, add the milk and the Sweet Potato Mash Mix and mash into a puree.
Add the chorizo, half of the feta, cherry tomatoes and arugula and mix everything together to form a mash.
Divide the mashed potatoes among the plates and garnish with the remaining feta.

Liever vegetarisch? Ook lekker met walnoten in plaats van chorizo.
