Sweet potato mash with smoked chicken
Sweet potato and spinach mash. Delicious with smoked chicken breast.
This sweet potato mash is delicious year-round. The Sweet Potato Mashed Potato Mix complements the sweet potato perfectly with the sweet notes of fennel seeds and cinnamon. The spinach and smoked chicken complete the mash.
Preparation
Finely chop the onion and dice the sweet potato and smoked chicken breast.
Bring a pan of ample water to a boil and cook the sweet potato for about 15-20 minutes, or until tender. Drain well.
Heat a large frying pan with the (olive) oil and fry the onion until translucent. Add the spinach in batches and cook until wilted.
Mash the sweet potato into a puree and add the spinach, whole milk, and the Sweet Potato Mash Mix.
Finally, stir in the diced smoked chicken breast.
