Preparation
To make the Sticky Roast, portion the pork neck into roulade-sized portions.
Season the pork neck with the Verstegen Herb Mix for spareribs.
Place the seasoned meat in a vacuum cooking bag and add the Marinade for Spareribs.
Vacuum seal the mixture and let it marinate for at least 12 hours.
Cook sous-vide in a steam oven for 3 hours at 90ºC.
Sell the roulade as American Sticky Pork Roast in slices.
