Cottage cheese omelet wrap with roast beef
Looking for a quick lunch or light meal? Try these cottage cheese omelet wraps! Filled with julienned carrots, cucumber, lamb's lettuce, and slices of roast beef, this omelet is packed with flavor and protein!
Preparation
Preheat the oven to 180°C (350°F). Combine the cottage cheese, eggs, and Verstegen World Spice Meal - Omelet in the jug of a food processor or blender and blend until smooth.
Divide the cottage cheese mixture between two baking sheets lined with parchment paper and spread it out to form a wrap as large and even as possible. Bake for 15 minutes, or until golden brown and cooked through. Let cool completely.
Using the spiralizer, make spaghetti from the cucumber.
Turn the wraps over and top them lengthwise with roast beef, lamb's lettuce, carrot julienne, cucumber spaghetti, and sunflower seeds. Roll up the wrap and cut into smaller rolls. Serve with skewers.
