Courgette spaghetti with cherry tomatoes and mozzarella
A light, vegetarian zucchini spaghetti with cherry tomatoes and mozzarella balls, arugula, and pine nuts. Delicious on a sunny day!
Did you know that spaghetti made from zucchini is also called courgetti?
Preparation
Halve the sweet cherry tomatoes.
Cook the zucchini spaghetti according to the instructions on the package, rinse under cold running water and let it stand for a while.
Meanwhile, roast the pine nuts in a dry frying pan.
In a large bowl, combine the arugula with the zucchini spaghetti, sweet cherry tomatoes, mini mozzarella balls, basil, thyme, and extra virgin olive oil.
Divide the zucchini spaghetti among plates and garnish with the toasted pine nuts. Season with salt and/or pepper to taste.

- 250 g zoete cherrytomaten
- 50 g rucola
- 150 g mini mozzarella bolletjes
- 50 g pijnboompitten
- 2 el Basilicum
- 1 el Tijm
- 4 el olijfolie extra vierge
- peper en zout, naar smaak
