Middle Eastern fresh couscous salad with cucumber and coriander
A refreshing Middle Eastern couscous salad with fresh vegetables, cilantro, and lime. Delicious as a side dish.
Preparation
Soak the couscous with the raisins according to the instructions on the package and add the World Spice Blend - Ras el Hanout.
Dice the cucumber, tomatoes, and feta cheese. Finely chop the red onion. Coarsely chop the cashews. Finely chop the cilantro and zest the lime.
In a serving bowl, combine the cooled couscous with the olive oil, chopped vegetables, feta cheese, and nuts. Add salt to taste, if desired.
Garnish the salad with fresh coriander and lemon zest.
