Egg muffins with red pepper and bacon cubes
An easy and healthy recipe. These egg muffins are not only delicious on a cocktail platter, but can also be enjoyed as a snack or lunch.
A delicious dish for drinks, as a snack, or for lunch: egg muffins with red bell pepper and bacon cubes. This recipe is easy to make, healthy, and ready in no time.
Preparation
Preheat the oven to 180°C (350°F). Halve the leek lengthwise and slice it into thin half-rings, 3 mm thick. Cut the bell pepper into 1 cm cubes.
Mix the eggs with the cream, World Spice Blend - Ras el Hanout, sea salt, the chopped leek and red pepper.
Grease a muffin pan with 1 tablespoon of olive oil and spread the egg mixture evenly. Place the muffin pan in the preheated oven for 15 minutes, or until the egg muffins are golden brown and cooked through. Remove from the oven and let cool.
Heat a pan with the remaining olive oil and fry the bacon for 6 minutes until golden brown and cooked through.
Remove the muffins from the tin, divide the fried bacon over the muffins and serve.
