Focaccia with cherry tomatoes and shallots
Love focaccia? Try this easy version! Made with fresh pizza dough, the focaccia gets a spicy, Mediterranean flavor from the pizza seasoning. Top with cherry tomatoes, shallots, pine nuts, and fresh arugula for a flavorful twist.
Preparation
Preheat the oven to 200°C (400°F). Roll out the pizza dough on a baking sheet lined with parchment paper. Cut the dough in half to make two oblong focaccias.
Toss 2/3 of the Verstegen WSM Pizza topping with the olive oil. Spread the olive oil over the pizza dough. Using your fingertips, press the dough and oil into the dough.
Halve the cherry tomatoes. Peel and slice the shallot into rings. Scatter the cherry tomatoes, shallot, and pine nuts over the dough. Place the focaccia in the oven and bake for 18 minutes, or until golden brown.
Before serving, divide the arugula over the focaccia.
