This delicious salad is based on freekeh, a grain commonly used in the Middle East. It's rich in fiber and pairs beautifully with the oriental spice blend za'atar. Along with grilled chicken, peppadew, and goat cheese, it makes a filling salad for your lunch or dinner.
Preparation
Prepare the freekeh according to the instructions on the package and drain.
Mix 1 tablespoon of oil with the salt and ½ tablespoon of World Spice Blend - Za'atar. Spread this over the chicken. Heat a grill pan and grill the chicken for 8 minutes per side. Cut into long slices.
Cut the avocado in half, remove the pit and peel, and slice. Cut the peppadews in half.
Mix the remaining oil with the remaining World Spice Blend - Za'atar to make a dressing.
Divide the lettuce among plates, followed by the freekeh, grilled chicken, avocado, and papadews. Crumble the goat cheese and scatter it over the salad. Serve with the dressing.
