Fries with stew

Another true classic: fries with stew. Tender beef braised in brown beer with winter vegetables and served with fries and mayonnaise. This winter dish takes a little preparation time, but it's more than worth the wait! A golden oldie packed with flavor.
Preparation
Season the beef with Stew Mix and let it marinate in the refrigerator for 10 minutes.
Peel and coarsely chop the onion and garlic. Halve the leek lengthwise and wash it, then cut it into 2cm-thick halves. Wash the carrots and cut them into 2cm cubes.
Heat the olive oil in a Dutch oven over medium heat and brown the beef. Add the vegetables and cook for 3 minutes.
Deglaze the pan with brown beer and simmer over low heat for 3-4 hours, covered, until the beef tenderloin is falling apart. Be careful not to let it boil dry.
Preheat the oven to 200°C (400°F). Spread the ribbed fries on a baking sheet lined with parchment paper and bake according to the package directions. Serve the fries with the stew and mayonnaise.

- 600 ml bruin bier
