BBQ shrimp skewers with oriental salad

These spiced shrimp skewers with satay sauce are the perfect alternative to the meat version.

Skewers are a must-have for any BBQ. You can, of course, opt for traditional meat skewers, but there are also plenty of options with fish or vegetables. For example, these spicy shrimp skewers with satay sauce. Serve with an Asian salad, and you've got a delicious meal.

Preparation

Slice the Chinese cabbage into thin strips, remove the stringy stems from the sugar snaps and cut them into 1 cm thick pieces. Shave the carrots into ribbons with a cheese slicer or mandolin. Mix this with the soy beans.

Marinate the shrimp with the Scampi & Shrimp Mix and the olive oil for 10 minutes.

In the meantime, heat the satay sauce (ready-made) according to the instructions on the packaging.

Remove the seeds from the red chili pepper and finely chop it. Mix it with the soy sauce, sesame oil, and honey to make a dressing. Mix this into the cabbage and soybean salad.

Thread the shrimp onto the skewers. Grill the skewers for about 5 minutes or until cooked through (be careful not to overcook the shrimp). When the skewers are done, grate the lemon zest over them. Serve the skewers with the salad and satay sauce.

Soak wooden skewers in lukewarm water for 10 minutes before using them, before threading the chicken onto them. This will prevent them from burning on the BBQ.
