Roasted sweet potato wedges with avocado and cottage cheese
A colorful and nutritious side dish. With guilt-free hot chili sauce to add extra spice. Perfect for serving 4.
Bereidingswijze
Preheat the oven to 220°C (425°F). Peel the sweet potatoes and cut them into wedges. Toss in a bowl with olive oil and a pinch of salt.
Arrange the wedges on a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes, or until golden brown and cooked through. Toss halfway through to ensure crispy results.
Halve the avocado, remove the pit, and cut the flesh in a diamond pattern. Scoop out the cubes. Thinly slice the scallion.
Arrange the roasted wedges on a platter. Spoon the cottage cheese and avocado cubes over them. Sprinkle with the scallions and finish with a generous drizzle of Guilt-Free Hot Chili Sauce.
