Preparation
Cut the cold butter into pieces. Place it in a bowl and mix in the flour, caster sugar, and a pinch of salt. Knead into a firm dough. Add 1 to 2 tablespoons of milk if necessary.
Wrap the dough in cling film and let it rest in the refrigerator for 1 hour.
Preheat the oven to 200 degrees.
Beat the egg in a small bowl. Mix the almond paste with half of the beaten egg, the ground anise seed, and the lemon zest. Set aside.
Roll out the dough to about half a centimeter thick and cut out 20 circles using a cookie cutter. Place 10 circles on a baking sheet lined with parchment paper.
Mix 1 tablespoon of milk into the beaten egg and brush the top of the circles.
Divide the almond paste evenly over the filling into 10 equal parts. Place the remaining 10 circles on top, pressing the sides firmly together. Scatter the almond halves over the filled pastry and brush the top with the remaining egg mixture.
Bake the filled cookies in the preheated oven for about 15-20 minutes until golden brown.
