Vegetable quiche with sweet potato
This vegetarian quiche combines the mild flavor of sweet potato with creamy goat cheese, topped with crunchy bimi for added freshness and bite. Easy to make, packed with flavor!
Preparation
Preheat the oven to 170°C (350°F). Peel the sweet potato and cut it into thin slices, no thicker than 0.5 cm. Cut the bimi into thirds, halving the thicker pieces lengthwise.
Line the springform pan with the quiche dough, leaving a slight overhang above the edge. Spread the sweet potato and bimi over the base.
In a bowl, whisk together the eggs, heavy cream, half of the goat cheese, and Verstegen WKM Traybake vegetables. Pour the mixture into the quiche dish. Crumble the remaining goat cheese over the quiche and bake for 30 minutes, or until golden brown and cooked through.
Serve the quiche with the lamb's lettuce.
