Jackfruit stew with sweet potato fries

Jackfruit, are you familiar with it? This unique meat substitute is a tasty fruit with a meaty texture. We make a delicious stew with it. Served with sweet potato fries, gherkins, peppadew, and sour cream, it's a surprise on your plate.
Preparation
Preheat the oven to 200°C (400°F). Spread the sweet potato fries on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and 1 teaspoon of sea salt and roast for 30 minutes.
Peel and finely chop the onions and garlic cloves. Dice the carrots. Drain the jackfruit and rinse under cold water.
Heat the remaining oil in a Dutch oven and sauté the onion and garlic until translucent. Add the carrots and tomato paste and cook for 5 minutes. Add the flour and Beef Stew Mix and cook for 2 minutes. Deglaze with the red wine. Add the vegetable stock and jackfruit and simmer for 20 minutes over low heat with the lid on the pan. Remove the lid and simmer for another 10 minutes.
Meanwhile, cut the spring onion diagonally into rings and the gherkin into wedges.
Serve the jackfruit stew with sweet potato fries and garnish with the peppadew, sour cream, spring onions and gherkins.

- 300 g winterpeen
- 560 g pulled young jackfruit
- 1 el olijfolie
- 70 g tomatenpuree
- 4 el bloem
- 1 ½ el Mix voor Stoofvlees
- 150 ml rode wijn
- 300 ml groentebouillon
- 2 stengels bosui
- 100 g zoetzure augurk
- 150 g peppadew
- 100 g zure room
