Jamaican-spiced chicken with vegetables from the oven. A delicious oven dish packed with Jamaican-spiced chicken and vegetables, served with quinoa.
Preparation
Preheat the oven to 180°C (350°F). Drain the pineapple chunks. Cut the chicken thighs into thick strips. In a bowl, combine the chicken thigh strips, the drained pineapple chunks, 1 tablespoon World Spice Blend - Jamaican Jerk, 2 tablespoons olive oil, and honey.
Meanwhile, peel the carrots and cut them into small pieces. Cut the bell peppers into large squares. In a bowl, combine the carrots, bell peppers, and baby corn with 1 tablespoon of World Spice Blend - Jamaican Jerk. Drizzle with 3 tablespoons of olive oil.
Arrange the marinated chicken thigh strips, pineapple chunks, and seasoned vegetables on a baking sheet. Bake for 20 to 25 minutes in a preheated oven.
Meanwhile, cook the quinoa according to the package directions. Divide the cooked quinoa among plates and serve the grilled chicken and vegetables on top.
