RESTRUCTURED - Loaded fries with pulled chicken
Preparation
Season the chicken thighs with the Tandoori spices, place in the vacuum cooking bag and cook sous-vide at 85ºC for 45 minutes.
Shred the chicken thighs, cream them with the liquid from the vacuum cooking bag and add salt to taste if necessary.
Cut the tomatoes into cubes, the green pepper into strips, the spring onion and chilies into rings.
Fry the fries until golden brown and serve with the pulled chicken, tomato, pepper, spring onion and chili rings.
Garnish with fresh coriander and garlic sauce.
