Soak the saffron threads in water for 10 minutes.

Melt 1 dl of the cheesecake mixture in a saucepan and add the saffron water. Let it infuse, covered, in the melted cheesecake for several hours.

Optionally, reheat and pass through a fine sieve. Allow this mixture to cool thoroughly in the refrigerator.

Whip the remaining cheesecake mixture together with the saffron mixture in a stand mixer.

Mix all ingredients.

Line 2 cake rings of 14 cm with acetate film and place them on a baking sheet with a baking mat.

Divide the base mixture over the two rings and press down firmly with a tamper.

Transfer the cheesecake to a piping bag and fill the rings.

Smooth out and let the cakes set well in the refrigerator for at least 2 to 4 hours.

Orange Blossom Gel

For the gel, boil the ingredients together for 2 minutes and pour out.

Allow to cool and blend until smooth in a blender.

Transfer to a piping bag.

Assembly

Release the cakes and cut into equal slices.

Arrange the slices on the plate and garnish with the orange blossom gel, pistachio paste, crushed pistachios, mandarin zest, fig segments, and chocolate decoration.

Finish with a quenelle of vanilla ice cream.

  • 125 g gesmolten boter
  • Gel van oranjebloesem
  • 500 ml mandarijnen sap
  • 50 ml oranjebloesem sap
  • 25 g suiker
  • 5,5 g agar agar
  • Garnering
  • 30 g pistache, gemalen
  • 16 st chocolade decoratie
  • 10 g pistache pasta
  • 3 st verse vijgen
  • 1 st mandarijn, zeste
  • 10 quenelles vanille-ijs
