Sesame crackers with white chocolate
Sesame cookies; cookies we've known and loved for a long time, but with a twist.
Kletskoppen, traditional Dutch cookies we've known and loved for ages! We've also made these hard, thin, and crispy cookies, but with a twist. We've added sesame seeds to the cookies and dipped them in delicious white chocolate. It doesn't get any better than this, right?
Preparation
Preheat the oven to 160°C (320°F). Heat a pan over low heat without oil and toast the sesame seeds. Melt the butter in a saucepan.
Separate the egg and beat the egg white until it resembles whipped cream. Mix this with the sesame seeds, butter, flaxseed, and honey.
Place the pastry ring on a baking sheet lined with parchment paper. Place 1 tablespoon of the sesame mixture in the center of the ring and spread it with a spoon until you have a well-covered circle about 1 cm thick. Repeat this 8 times.
Place the baking sheet in the oven and bake the cookies for 10 minutes, turning them carefully halfway through, and bake for another 5 minutes. Remove from the oven and let cool.
Melt the white chocolate in a bain-marie and dip the cookies halfway into the chocolate and let them cool.
