Looking for something different for lunch? Get started with this spinach egg omelet! The slightly tart spinach, creamy cottage cheese, flavorful salmon, and a hint of dill create a flavor explosion in your mouth.
Preparation
Mix the eggs, cream, black pepper, sea salt, ½ of the spinach and ¾ of the dill with a hand blender until smooth.
Halve the cherry tomatoes and chop the hot-smoked salmon into large pieces.
Heat the olive oil in a pan over medium heat and fry ¼ of the omelet batter into a wrap. Repeat until all the batter is used.
Divide the cottage cheese, remaining spinach, cherry tomatoes and warm smoked salmon over the spinach egg omelets.
Garnish the spinach omelets with the remaining dill and roll them up. Insert a skewer into the spinach omelet to hold it together.
