Start the day with a delicious shakshuka with eggs, spicy tomato sauce, feta and fresh parsley.

Thinly slice the green bell pepper, half-ring the onions, and finely chop the garlic cloves. Crumble the feta cheese into coarse crumbs. Coarsely chop the parsley.

Heat the olive oil in a sauté pan. Sauté the bell pepper strips, onion, and garlic until golden brown. Add the chili flakes, mild paprika, and salt to taste. Cook for 1 minute. Add the diced tomatoes and reduce the heat to low.

Add the crumbled feta cheese and gently stir into the mixture. Crack the eggs into the pan, trying to keep the yolks intact. Cook the eggs to your liking (cover the pan if necessary).

Meanwhile, grill the slice of bread in a sandwich maker or grill pan. Halve the slices of bread diagonally, if desired. Garnish the shakshuka with the coarsely chopped fresh parsley and serve with the toasted bread.

  • 3 tenen knoflook
  • 2 tl Chilivlokken
  • 1 el Paprikapoeder (mild)
  • ½ bosje verse peterselie
  • 2 el olijfolie
  • zout, naar smaak
