French toast made from sugar bread
These sugar-bread French toasts with star anise whipped cream and walnut ice cream are the ultimate winter guilty pleasure. Make an impression with this dish during Sinterklaas, Christmas, or New Year's Eve.
A true winter guilty pleasure: sugarloaf French toast with star anise whipped cream and walnut ice cream. The star anise and walnuts make this dessert not overly sweet, but beautifully balanced. This festive dessert is perfect for Sinterklaas, Christmas, or New Year's Eve. But it's also a delicious dish to serve outside of the holidays.
Preparation
Cut the sugar loaf into 8 slices. Beat the eggs with the milk and the Spice Mix for Cookies & Speculaas.
Heat a pan with 180g of heavy cream and the star anise over low heat for 15 minutes, allowing the star anise flavor to infuse into the cream. Be careful not to let the cream boil. Pour the cream into a container and refrigerate until cold.
Meanwhile, roughly chop the gingerbread nuts into a crumble.
Heat a pan of butter over medium heat. Dip the sugar loaf in the egg mixture and bake for 6 minutes, or until golden brown. Repeat until all the sugar loaf is used.
Meanwhile, remove the whipped cream from the refrigerator and add the remaining whipped cream and sugar. Beat until the consistency of whipped cream is smooth with a mixer.
Serve the French toast with the gingerbread crumble, star anise whipped cream and walnut ice cream.

- 30 g suiker
- 250 g walnootijs
