Making your own spicy speculaas is easy with this recipe, but why not take it up a notch and use a speculaas board? This recipe makes about 20 speculaas cookies on a board. They're delicious to make during the winter months, and a real treat for your guests.

Preparation

Mix all ingredients together into a nice dough ball.

Wrap the dough in cling film and let it rest in the refrigerator for at least 3 hours, preferably overnight.

Preheat the oven to 225 degrees.

Dust the gingerbread board with a little flour and knock off any excess.

Take a small amount of the dough and knead it briefly with your hands. Then press it into the speculaas mold. Press it down with your fingers and dust it with a little flour so you can press it down firmly with a rolling pin.

Using a sharp knife, trim away any excess dough.

Turn the board over and hold it horizontally over the counter (preferably as close to the counter as possible). Then knock the speculaas out of the mold.

Repeat this until all the dough is used up.

Carefully place the speculaas cookies on a baking sheet lined with baking paper and bake in the preheated oven for 6 to 8 minutes until done.

Variatietip

Hou je niet van pittig? Laat dan de chilipoeder en/of de peper achterwege en bak authentiek oud-Hollandse speculaasjes. Heb je geen speculaasplank in huis? Je kunt ook het deeg met een deegroller in zijn geheel uitrollen en afbakken. Rol het deeg tot 0,5 cm dik en bak de speculaas in zijn geheel in 10-15 minuten gaar. Breek na het bakken de speculaasplak in stukken en je hebt speculaasbrokken.
