Sweet potato fries with chickpeas and cheese
This dish is quick and easy to prepare on days when you don't really have time to cook. The pumpkin seeds add a surprising crunch.
Looking for something different than your average fries? Try these sweet potato fries with World Spice Blend - Za'atar, chickpeas, and white cheese. Spread everything on a baking sheet and let the oven do the cooking. This way, you'll have this vegetarian meal ready quickly and easily!
Preparation
Preheat the oven to 200°C (400°F). Remove the green part of the carrots, leaving about 2 cm. Peel the carrots and halve them lengthwise. Peel and finely chop the garlic.
Arrange the sweet potato, carrots, garlic, and chickpeas on a baking sheet lined with parchment paper. Sprinkle with the sunflower oil, World Spice Blend - Za'atar, and salt and pepper to taste.
Toss the vegetables together and place the baking tray in the preheated oven for 25 minutes until the vegetables are cooked.
Crumble the white cheese into 1-cm pieces and roughly chop the mint. Serve the roasted vegetables and scatter the white cheese, mint, and pumpkin seeds over them.
