Oven-baked spiced salmon fillets with broccoli
Tender salmon fillet seasoned in Indonesian style.
Spiced salmon fillets baked in the oven with broccoli and couscous, Indonesian-style. Delicious with the ginger dressing.
Preparation
Preheat the oven to 160°C (320°F). Cut the broccoli into florets and slice the orange. Finely chop the ginger.
Combine the World Spice Blend - Tandoori Masala with 3 tablespoons of olive oil and marinate the salmon fillets all around in the marinade. Place them on a baking sheet lined with parchment paper. Arrange the orange slices on top of the salmon. Bake the salmon for about 15 minutes in the preheated oven.
Meanwhile, cook or steam the broccoli florets until tender or al dente. Meanwhile, combine the couscous with 300 ml of hot water in a bowl and let it soak, covered, for about 8 to 10 minutes.
Combine 3 tablespoons of extra virgin olive oil with the ginger and parsley. In a bowl, combine the couscous with the dressing. Season with black pepper to taste. Serve the tandoori salmon fillets with couscous and steamed broccoli.
