Green curry with shrimp and bok choy
Creamy, spicy, and full of flavor: this green curry with shrimp is packed with character! It'll be ready in no time. Noodles form the base, and we add shrimp, crispy baby bok choy, fennel, and garden peas for your daily dose of vegetables.
Preparation
Halve the fennel. Remove the thick core and cut into 0.5 cm thick slices. Quarter the bok choy lengthwise and cut the lime into wedges.
Heat the sesame oil in a wok. Add the shrimp, fennel, bok choy, and peas, season with Verstegen World Spice Meal - Green Curry, and stir-fry for 4 minutes over high heat.
Deglaze the pan with coconut milk. Once the coconut milk is warm, add the udon noodles. Cook for 2 minutes, allowing the noodles to separate.
Divide the green curry among the plates and serve with lime wedges.
