Green curry with (vegetarian) chicken, broccoli and bell pepper
This green curry has a soft, creamy sauce with chicken and vegetables, packed with flavor thanks to World Spice Meal – Green Curry and delicious with rice.
Bereidingswijze
Bring a large pot of water to a boil and cook the rice according to the package directions. Drain.
Cut the chicken into pieces. Cut the broccoli into florets and the bell pepper into strips.
Heat the olive oil in a pan over medium heat and fry the chicken until golden brown all over.
Add the vegetables and fry for a few minutes.
Add the coconut milk and bring to a boil. Reduce the heat.
Add the World Spice Meal – Green Curry and stir well. Let the curry simmer for 10 to 15 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
Serve the green curry with the rice and garnish with fresh coriander and a slice of lime, if desired.

- 400 ml kokosmelk
- 250 g groenten (bijv broccoli, paprika en peultjes)
- 150 g rijst
- 1 el olijfolie
