This shakshuka is made with green vegetables instead of a red tomato sauce! A green shakshuka with spinach, peas, and broccoli. A unique twist on this Middle Eastern vegetable dish. This vegetarian dish is flavored with the World Spice Meal - Shakshuka.

Preparation

Cut the broccoli into small florets. Chop the onion and finely chop the garlic.

Bring a pan of water to a boil and cook the broccoli florets until al dente in about 5 minutes. Cook the peas along with them for the last minute.

Take a large frying pan and sauté the onion and garlic in a little oil for a few minutes.

Add the spinach little by little. Once the spinach has wilted, season it with the World Spice Meal Shakshuka. Add the cooked broccoli and peas to the spinach.

Make 4 indentations in the vegetables for the eggs. Crack an egg into a cup and pour it into an indentation. Repeat this with the remaining 3 eggs. Cover the pan with a lid and serve when the eggs have set.

Garnish to taste with fresh parsley and feta.

Variatietip

Je kunt elke groene groenten toevoegen of vervangen in deze shakshuka. Ook lekker is bijvoorbeeld courgette in blokjes, boontjes of groene asperges. Kook hiervoor de boontjes en groene asperges, zoals de broccoli en doperwten. De courgette blokjes bak je in de koekenpan.
