Vegetarian shakshuka with sweet potato
Egg dish with sweet potato, leek and eggplant.
This delicious vegetarian shakshuka is a dish of egg in tomato sauce. The sauce contains all kinds of different vegetables, such as sweet potato, leek, eggplant, and tomatoes. The dish contains as much as 350 grams of vegetables per person. The shakshuka is flavored with the World Spice Meal Shakshuka.
Preparation
Finely chop the onion. Cut the leek into strips and the aubergine and potatoes into cubes of approximately 1.5 cm. Heat a pan with oil and brown the aubergine. Add the sweet potato and onion and fry for about 5 minutes. Add the diced tomatoes and the World Spice Meal Shakshuka and cook for about 4 minutes.
Make 4 indentations in the sauce for the eggs. Crack an egg into a cup and pour it into an indentation. Cover the pan with a lid and serve when the eggs have set.
