Fluffy cinnamon pancakes
Fluffy pancakes with cinnamon.
Surprise your loved one with a delicious stack of fluffy cinnamon pancakes! Perfect any day of the week, but especially special on a holiday. Delicious with fresh fruit like banana and blueberries.
Preparation
Separate the eggs into two bowls. Whisk the egg yolks with the flour, cinnamon, and milk until smooth. Then, using a mixer, beat the egg whites with the sugar until stiff peaks form. (Tip: It's stiff peaks when nothing falls out when you turn the bowl upside down.)
Heat the pan with the margarine over medium heat. Gently fold the beaten egg whites into the pancake batter until smooth and fluffy.
Using a soup ladle, scoop a ladleful of batter into the pan and spread it out until it forms a 10 cm (4 inch) pancake. Flip the mini cinnamon pancake when small bubbles appear.
Meanwhile, slice the banana. Stack the pancakes, arranging the banana and blueberries between them. Serve with syrup or honey to taste.
