Red lentil soup with Ras el Hanout
A delicious and filling soup with plenty of fiber thanks to the lentils. Perfect for warming up on colder days.
Bereidingswijze
Peel and finely chop the onion. Slice the carrots. Deseed the red pepper and chop finely.
Heat the oil in a pan and sauté the onion until translucent. Add the World Spice Blend Ras el Hanout and cook for 1 minute. Add the carrots and red pepper and cook for 5 minutes. Add the vegetable stock, lemon juice, and lentils and simmer for 30 minutes over medium heat. Puree the soup until almost smooth.
Serve the lentil soup with the crème fraîche, parsley and chili flakes.
