Vegan jackfruit curry with cauliflower rice

Jackfruit is the perfect meat substitute. It's a tasty fruit with a meaty texture that you can use in all sorts of dishes, ideal if you're craving a vegetarian or vegan meal. We've used jackfruit to prepare a vegan chicken curry with cauliflower rice and green beans. An easy and delicious main course that's ready in half an hour!
Preparation
Peel and dice the pineapple, and peel and finely chop the onion and garlic. Rinse and drain the jackfruit. Roughly chop the cashews.
Heat the oil in a pan and sauté the onion and garlic until translucent. Add the tomato paste, curry powder, and jackfruit and cook for 5 minutes. Add the stock and bay leaf and simmer gently for 10 minutes. Add the coconut milk, cream, and pineapple to the jackfruit mixture and stir well. Heat over low heat.
Bring water to a boil in a saucepan, add the green beans, and cook for 10 minutes until tender. Drain. Bring water to a boil in another saucepan and blanch the cauliflower rice for 2 minutes. Drain and let drain.
Divide the cauliflower rice among plates and top with the green beans and jackfruit. Garnish with the cashews.
