Summer pasta salad with tomato and mozzarella
A nice fresh salad, perfect for summer.
Summer pasta salad with tomato and mozzarella. This pasta salad is deliciously refreshing and filled with tomato, avocado, cucumber, and mozzarella. This vegetarian dish is seasoned with the World Spice Meal – Pasta Bolognese.
Preparation
Cook the pasta according to the package directions. Rinse under cold water, add 1 tablespoon of olive oil, and toss to combine.
Make the salad dressing by combining 2 tablespoons of olive oil and lemon juice. Then add the World Spice Meal – Pasta Bolognese and mix well.
Cut the cherry tomatoes into wedges and dice the avocado and sun-dried tomatoes. Cut the cucumber into wedges.
Meanwhile, toast the pine nuts in a dry frying pan until golden brown.
Combine everything in a large bowl and toss well to combine the vegetables, pasta, and dressing. Garnish with garden cress to taste.

- Je kunt ook extra groenten toevoegen aan deze pastasalade, zoals (gegrilde) courgette, aubergine en groene asperges bijvoorbeeld. - Parmezaanse kaas te zout? Laat deze weg of vervang deze door (zachte) geitenkaas, hüttenkäse, ricotta of zuivelspread. - Geen fan van gedroogde tomaat? Vervang deze dan door verse cherrytomaatjes.

- 150 g koemelkmozzarella (balletjes)
- 100 g snoeptomaten
- 25 g pijnboompitten
- 25 g zongedroogde tomaten
- 1 avocado
- ½ komkommer
- 2 el Parmezaanse kaas (vlokken)
- 3 el olijfolie
- 3 tl World Spice Meal – Pasta Bolognese
- 2 tl citroensap
- tuinkers, naar smaak, ter garnering
