This dish will get you in the autumn spirit thanks to ingredients like pumpkin and celeriac. Add warming spices like cinnamon and ginger, and this autumnal stew is complete! We top the pumpkin stew with Gemakballen (easy meatballs) for a vegetarian alternative.

Preheat the oven to 220°C (425°F). Peel the pumpkin and celeriac. Halve the pumpkin and remove the stringy parts and seeds. Cut the pumpkin and celeriac into 2cm cubes and spread them on a baking sheet lined with parchment paper. Drizzle with 1/2 of the olive oil and roast for 20 minutes, or until tender.

Meanwhile, prepare the Knead & Ready Easy Meatballs Classic Spiced according to the package directions. Remove the meatballs from the pan and reserve the cooking liquid. Pour in the red wine and reduce by half. Add the vegetable stock and unsalted butter and reduce by half again until you have a flavorful gravy.

Meanwhile, roughly chop the mixed mushrooms. Halve the leek lengthwise. Rinse well and slice into half rings about 1 cm thick.

Peel and finely chop the garlic. Heat the remaining olive oil in a large skillet and sauté the garlic. Add the mushrooms and cook for 3 minutes over medium heat. Add the leek and cook until soft and the mushrooms are al dente and golden brown. Season with black pepper and sea salt, if desired.

Remove the pumpkin and celeriac from the oven. Using a potato masher, mash together with the crème fraîche, ground ginger, ground cinnamon, black pepper, and sea salt.

Briefly reheat the Gemakballen in the gravy. Divide the mashed potatoes among plates, followed by the mushrooms with leek, Gemakballen in gravy, and the arugula.
