Preparation
Peel the carrot and celeriac and cut them into 3cm pieces. Peel and coarsely chop the onion.
Rinse the split peas under lukewarm water and place them in a saucepan just below the surface. Bring to a boil and skim off any foam with a slotted spoon. After 30 minutes, add the vegetable bouillon cubes, celeriac, carrot, onion, bay leaf, and mace. Simmer for 1.5 hours until tender. Remove the bay leaf and mace and coarsely purée the pea soup.
In the meantime, prepare the smoked sausage according to the instructions on the packaging and cut into slices.
Divide the pea soup among the bowls and garnish with the smoked sausage.
