Indian dahl with papadums

Dahl is a delicious Indian dish filled with legumes, spices, and herbs. We've created an easy and delicious version of this dish, bursting with flavor and color. The papadums are perfect for dipping and complete the dish.
Preparation
Peel and finely chop the onion and garlic. Slice the red pepper into rings and the tomatoes into wedges. Rinse the lentils with water and drain.
Heat the oil in a large pan over medium heat and sauté the onion and garlic until translucent. Add the ground mustard seeds, ground turmeric, ground ginger, and World Spice Blend - Garam Masala and cook for 1 minute to release the spice flavors. Add the tomato paste and half the chopped red chili pepper and cook for another minute. Then add the coconut milk, spinach, and half the tomatoes and stir well until the spinach has wilted. Simmer over medium heat for 10 minutes.
Spoon the dahl into bowls and garnish with the remaining red pepper, tomato, and fresh coriander. Serve with the papadums.
