Chicken and spinach quesadillas
These quick quesadillas are the perfect dish for when you need a quick and tasty meal. The various vegetables, cheesy mozzarella, and seasoned chicken create a perfect balance of flavors!
Preparation
Heat the olive oil in a skillet and cook the chicken breast for 4 minutes, or until golden brown on the edges. Add the raw vegetable and bell pepper mix, spinach, and Verstegen WSM Chicken Wrap and cook until the spinach has wilted.
Top half of the wraps with the grated mozzarella and vegetable mixture. Press the remaining wraps on top of the filled wraps.
Preheat the oven to 50°C (122°F). Heat a skillet without oil or butter and cook the quesadillas one at a time until warm, crispy, and brown on both sides. Keep the cooked quesadillas warm in the oven while the others cook.
Meanwhile, halve the lime. Cut half of the lime into wedges. Squeeze the juice from the remaining lime. Combine the sour cream with the lime juice and stir until smooth.
Cut the quesadillas into wedges or quarters and serve with the dip.
