Fajita shrimp omelet with lime
This quick shrimp fajita omelet combines the warm flavor of fajita seasoning with a refreshing touch of lime. The shrimp are lightly fried for a delicious crunch, while the omelet forms a light, airy base. A tasty lunch is ready in just 20 minutes. Easy to make, delicious!

Preheat a frying pan. Meanwhile, beat the eggs. Heat 1/3 of the olive oil and pour ¼ of the beaten egg into the pan. Cook over low heat until the egg is cooked through, turning once the top is set. Repeat this process until all the eggs are gone.
Pat the shrimp dry with paper towels. Place in a bowl with two-thirds of the Verstegen World Spice Meal - Fajita and the remaining olive oil. Heat a skillet and fry the shrimp until golden brown and cooked through.
Thinly slice the jalapeño. Peel and thinly slice the red onion. Halve the avocado, remove the pit, scoop out the flesh, and cut into long slices. Cut the lime into wedges.
Fold the omelets into quarters and divide them among plates. Season with the remaining Verstegen WSM Fajita. Divide the mixed salad, avocado, shrimp, red onion, jalapeño, and lime wedges among the plates and serve.
