Chicken fajitas with avocado and lime
We love fajitas for dinner! This time, we're going for chicken fajitas with creamy guacamole. The chicken thigh is sautéed in fajita spices for a Mexican twist and served in mini tortillas with guacamole, lime, and bell pepper. A surprising twist on a classic!

Preheat the oven to 180°C (350°F). Cut the chicken thigh into strips. Peel two-thirds of the shallot and slice thinly. Halve the bell pepper, remove the seeds, and slice thinly.
In a bowl, combine the chicken, shallot rings, bell pepper, olive oil, and ¾ of the Verstegen WSM Fajita. Stir well. Heat a pan over high heat and cook the chicken until golden brown and cooked through.
Divide the tortillas over a rack and heat in the oven for 5 minutes.
Meanwhile, peel and finely chop the remaining shallot. Halve the avocado, remove the pit, and scoop out the flesh. Finely chop the red pepper. Halve the lime. Squeeze the juice from ½ of the lime and cut the remaining lime into wedges. Mash the avocado with a fork and mix in the shallot, red pepper, lime juice, and remaining Verstegen World Spice Meal - Fajita.
Divide the chicken strips and vegetables among the tortillas, followed by the guacamole. Serve with lime wedges.
