Get cooking and surprise your loved one! Do it with these Valentine's Day cookies with a jam heart, of course. Super delicious and fun to make. The cookies are also easy to make with a different cutter. This recipe makes about 15-17 cookies.

Preparation

Mix the flour with the almond flour, light brown caster sugar, cinnamon (ground), ginger (ground), salt and baking powder in a bowl and set aside.

Beat the butter and powdered sugar with a mixer on low speed until combined. Increase the speed to high and beat until creamy. This will take about a minute. Then mix in the eggs, vanilla, and almond extract.

Gradually add the flour mixture to the creamy mixture until a firm dough forms. Form the dough into a ball and flatten it into a disk. Wrap the disk in cling film and refrigerate for about 2 hours to firm up.

Preheat the oven to 180˚C.

Sprinkle the work surface with flour, cut the dough disk in half and roll out each piece into a thin disk about 1/2 cm thick.

Cut out as many circles as possible from both dough disks. You can cut out about 30. Make sure you have an even number of circles. Cut a heart out of the center of half of the circles. This means you'll have one half (for example, 15 cookies) with a heart cut out and the other half (also 15 cookies) without a heart.

Place all the cut out cookies on a baking sheet lined with baking paper, about 2 cm apart.

Bake the cookies for about 10 minutes, or until the edges are just starting to brown. Bake for an additional 1 or 2 minutes if needed.

Let the cookies cool completely.

Spread the cookies without the heart shape with strawberry jam. Dust the cookies with the heart shape with powdered sugar and press them together.

Store the Valentine's Day cookies in an airtight container.

  • ½ tl Kaneel (gemalen)
  • ½ tl Gember (gemalen)
  • ½ tl zout
  • ½ tl bakpoeder
  • 80 g amandelmeel
  • 40 g lichtbruine basterdsuiker
  • 200 g ongezouten boter, op kamertemperatuur
  • 80 g poedersuiker, en extra voor garnering
  • 1 groot ei
  • 1 tl vanille extract
  • ¼ tl amandelextract
  • aardbeienjam (ongeveer 1 tl per koekje)
