The Vegetarian Burgers are made with cauliflower, chickpeas, and quinoa. They're delicious as a vegetarian main course and seasoned with ground cumin and ground coriander. This recipe makes about 10 burgers, perfect for a family meal.

Preparation

Preheat the oven to 200°C.

Break the cauliflower into florets and drizzle with olive oil and sea salt to taste. Roast the cauliflower in the oven for about 20 minutes or until the florets are tender.

Cook the quinoa according to the instructions on the package.

Drain the chickpeas and let them drip in a colander. Finely grind the drained chickpeas together with the roasted cauliflower in a food processor or with an immersion blender until a coarse mixture is formed. Make sure you don't get a puree; it should still have a slightly coarse texture.

Mix the coarse cauliflower-chickpea mixture with the quinoa, flour, almond flour, grated aged cheese, eggs, and ground Cumin and ground Coriander. Optionally, add some Chili flakes for extra spice and season with Sea salt if desired.

Form burgers from the mixture, heat a non-stick frying pan with olive oil, and fry the cauliflower curry burgers until golden brown on both sides. Carefully flip the burgers so they don't break apart.

Slice the avocado and serve the burgers on a hamburger bun with a leaf of little gem lettuce, the avocado, and the spicy chipotle mayonnaise.
