Farmer's omelet with sweet potato. An egg dish with sweet potato, zucchini, and bell pepper. Delicious for breakfast or lunch with a subtle Provençal flavor!

Preparation

Beat the eggs with a dash of milk and the World Spice Meal - Omelet. Add salt to taste.

Peel the sweet potato. Slice the spring onion into rings. Dice the tomatoes, bell pepper, zucchini, and sweet potato. Cut the Manchego cheese into small strips.

Boil the sweet potato cubes in plenty of water in a pan until done.

Heat a pan with olive oil to taste. Add the cooked sweet potato and chopped vegetables and cook for about 2 to 3 minutes.

Pour the egg mixture over the vegetables and reduce the heat to low. Add the Manchego cheese and scallions and let the egg set with a lid on the pan.

Variatietip

Varieer ook eens door 125 g chorizoworst in kleine blokjes te snijden en deze met de groente kort mee te bakken. Het is beter om niet te veel zout te gebruiken.

Serveertip

Proef eerst voordat je zout toevoegt. Met kruiden en specerijen is je gerecht vaak al heerlijk op smaak!

  • ½ courgette
  • 50 g zoete aardappels
  • 100 g manchego kaas
  • 3 el World Spice Meal - Omelet
  • 2 el (olijf)olie, naar smaak
