Chili sin carne with nachos and guacamole
Vegetarian lentil chili with homemade guacamole.
Chili sin carne: a flavorful chili, but vegetarian. Lentils replace the ground beef. Bell peppers, kidney beans, carrots, and tomatoes make this a colorful dish that's also packed with vegetables. Delicious with homemade guacamole and nacho chips!
Preparation
Peel and finely chop the onion and garlic. Halve the bell peppers, remove the seeds, and dice them. Slice the carrots into half moons and finely chop the red pepper. Drain the kidney beans and lentils.
Heat the olive oil in a pan and sauté the onion and garlic until translucent. Add the bell peppers, carrots, red pepper, kidney beans, lentils, diced tomatoes, cherry tomatoes, 1 teaspoon of salt, and the World Spice Meal - Chili Con Carne and cook for 15 minutes over medium heat.
Cut the avocados in half and remove the pit and peel. Mash with a fork until smooth. Add the lime juice, pepper, and remaining salt.
Serve the chili sin carne with the guacamole and nacho chips.
