Vegan jackfruit stew
Delicious vegetarian stew made with jackfruit.
Serve the vegan jackfruit stew with mashed potatoes or roasted potatoes, for example.
Preparation
Rinse the jackfruit and cut or tear it into smaller pieces. Toss the jackfruit pieces in a bowl with the flour.
Heat a little oil in a frying pan and brown the jackfruit pieces on all sides. Remove from the pan and place on a plate.
Cut the onion into half rings, finely chop the garlic and cut the carrot and celery into cubes.
Heat a little oil in a frying pan and sauté the onion until soft. Add the garlic, carrot, and celery and cook for a few minutes. Add the tomato paste, mustard, apple syrup, bay leaves, cinnamon, and cloves and stir well.
Stir in the jackfruit and cover with vegetable stock. Simmer over low heat for about 30 minutes, or until all the vegetables are tender.
Season with black pepper and sea salt.

- 1 blik jackfruit á 500 gram (let op; jonge jackfruit en niet op siroop!)
- 1 ui
- 2 teentjes knoflook
- 2 winterwortels
- 2 stengels bleekselderij
- 1 blikje tomatenpuree á 70 gram
- 400 ml groentebouillon
- 2 el bloem
- 2 Laurierblaadjes
- Kaneelstokje
- 3 Kruidnagels
- 2 el appelstroop
- 1 tl mosterd
- Olijfolie
- Zwarte peper
- Zeezout
