These knights, also known as breaded French toast, are perfect for surprising the family at Easter. Serve the French toast with apple and pear compote, seasoned with vanilla, a cinnamon stick, and whole cloves. You can, of course, sprinkle the breaded French toast with a little sugar and ground cinnamon!

Wash and zest the lemon. Peel the apples and pears, core them, and dice them.

Place the water, 70 grams of granulated sugar, the cinnamon stick, cloves, and lemon zest in a saucepan and bring to a boil. Then add the apple and pear cubes and simmer gently for about 5 minutes, or until the fruit is soft. Remove the fruit from the liquid and place it in a bowl. Reduce the liquid for about 10 minutes, then strain it over the fruit in the bowl. Let the fruit cool in the liquid.

Beat the eggs with the milk, salt, 25 grams of sugar, and the seeds of the vanilla pod. Place this mixture in a shallow dish. Place a bowl of breadcrumbs next to it. Dip the bread slices, one by one, in the egg mixture and then in the breadcrumbs.

Heat a little sunflower oil in a frying pan and fry the breaded slices until golden brown on both sides. Place on a serving platter and sprinkle with a little more sugar and ground cinnamon. Serve the "riders" (breaded French toast) with the apple and pear compote.
